Brownie Recipe for budget friendly lunchbox idea

Well we are back with the 2021 train.

And as we all know trying to fill lunchboxes with healthy foods and a little treat can sometimes be expensive.

So I thought I would share out no fuss, simple and budget friendly brownie that the kids absolutely rave over 🙂

It really is a basic brownie. With no nuts so its safe for both our daycare and our school.

Ingredients:

115g butter ( I use any that is on sale at the time)
1 cup white sugar
1/4 cup coco
1/2 tsp vanilla essence
2 eggs
3/4 cup plain flour
1/2 tsp baking powder
1/2 tsp salt
1 cup chocolate chips. I use all milk, dark and white

Instructions:

Preheat the oven to 180oc
Melt the butter
Mix the sugar, coco, vanilla essence, eggs, plain flour, baking powder and salt together.
Add the butter into the mixture and mix until combined.
Add chocolate chips and mix some more.

Place into a baking tin and bake for about 25 to 30 minutes. Or until just cracking on top.

Cool on a rack and slice
Keep in a container with the lid on to keep fresh.

Kids will go nuts for it 🙂
